Chef Dennis Devies is new to Cleveland, and originally hails from Alliance, Ohio. With nothing but a Jimmy Buffet CD, $1000, and high hopes he set off after culinary school to work under Chef Dave Kendrick at St.Croix. After gaining a few years of experience, he moved back to Ohio where he would spend nine years as the executive sous-chef at Brookside Country Club during the busy season, while continuing to work in the islands during the off season. In 2014 he was hired by the Miller’s to become the executive chef of the Music Box.
Working at the Music Box has been more than just creating a menu and cooking food for Chef Dennis, it’s been about creating an experience. Having opened a well-known space, with amazing views, came the opportunities to host events and weddings. Creating the menu and preparing the food for these events is something that Chef Dennis insists on. Why?
“I like to see the satisfaction on each and every guests face as they sit down and enjoy their meal,” he explains. “There’s something to be said about being a part of an event and watching the guests be able to take away a memory of a great time, with good people, and excellent food.”
Having dedicated his entire life to the food industry, Chef Dennis is often recognized for his talents and his skills in the industry, and credits his hardworking team for his success.
“They keep things fun, but when it’s show time they’re good about putting their game faces on,” he says. “We get the job done, and have a good time doing it.”
Having also won the Most Mouthwatering Menu award for Cleveland’s Restaurant Week, Chef Dennis competed against some of the biggest restaurant names in Cleveland and walked away with an award chosen by the attendees of the kickoff event. This award is something he’s very proud of.
“This kitchen is something we’ve had to build from the ground up,” he says with a smirk. “Winning an award of that caliber in our second year is an honor and it’s pretty cool.”
When asked about what he likes most about Cleveland, his response is one word. Everything. “I like the food scene, I like the atmosphere, and I LOVE Cleveland baseball.”
What you should take away: the most important thing to Chef Dennis is delivering a good product and guest satisfaction.
